Because it's a spectrum of light frequency. It's just how we interpret that color in the frequency wave. You're thinking it's a mix of color like we do for paint, but color is just a wave of light. And all the frequencies of light are absorbed except that particular wave that bounces off. And therefore we see that reflected.
