On your question about defoliating the plants, it is good to do. I defoliate around 2 feet from the bottom up.

I also prune any of the upper suckers that are growing toward the center of the plant. It really helps with air circulation which in turn reduces the chances of your plant getting sick. We also plant an "Early Girl" variety so we can have some smaller fresh tomatoes while waiting on the larger ones to ripen. Almost always have a handful of red tomatoes by the fourth of July.

Has anyone ever done pickles? I guess my real question is, how do I know what kind of cucumbers I'm growing, can any kind be pickles? These were random starter plants a client gave me, I'm not sure how long I should leave the cukes. I'm only growing them for the Guinea pig and possibly pickling.

It partly depends on what kind of pickle you want to make and how you are planning on storing them. Recipes typically call for Kirby pickles which has really come to refer to any smallish cucumber. If you are slicing, you can go a little bigger. If you are cutting into wedges, you probably want to stay 6-7 inches.

The process is pretty easy, just a bit time consuming. I've only made bread n' butter pickles. I got my mother's old recipe from my sister. Canned about 39 pints. Every time I open one up and start eating them, I am reminded of my mom. They are so good.

One tip, it is really better to use pickling salt. It is 100% pure salt. Table salt and some kosher salts have an anti-caking agents and/or iodine which can make your brine cloudy. Lots of good videos on YouTube.

I was thinking about doing some green beans along with the pickles too. They should keep that purple hue if canned, that might look cool.

These make very good pickles and are so easy to use, I dont do it the old fashioned long way anymore. I use the dill mix for green beans as well as okra, but add a little minced garlic and they are fabulous. The B&B pickles taste just like my moms did.

Hmm I'll have to look for that stuff, I definitely want dill. My plan was doing green beans and garlic in another jar. Yum!

I hate sweet pickles with the fiery passion of 1000 suns. So many assholes put sweet pickles in tartar sauce here. I have to ask about their tartar sauce before I order fish and chips. So gross.

I'm about to fucking cry you guys, for real. Overnight an elk came through and absolutely annihilated my garden. Every green tomato, gone. Pulled up every carrot. Only things left alive were my green beans which just got smashed, not eaten, and my cucumbers. FUUUUUUUUUUUUUUUUUCK.
