You don't. With some fish, either their bones are soft and stay soft after cooking, or soften to an edible state after cooking. So you don't worry about it other than not eating the heads. And some people do even that.

Had fresh sardines in Brazil - meh. dark oily isn't my preferred fish texture.
Used to eat the canned sardines while backpacking. Easy non-perishable way to provide actual meat 10+ days into a trip. Not my favorite but when hungry, anything is good. Warmed up TANG actually tastes pretty good when really cold and missing sugar.

The bones are small enough and soft enough to not bother. It's like the bone in canned salmon. I just mash it in when mixing for a sandwich or whatever. It's extra calcium.

And so do these. That company also charges for taking the bones out, so the higher cost for the boneless cans over the bone-filled cans. The point is, you don't *have* to remove the bones for the fish to be edible. Not like catfish or bass, for sure.
