My first wife and I did the vegetarian thing for a couple of years after we married, and we did well on it. We cut out all meat and proteins, including eggs and dairy, only ate plant food. I guess it'd be called vegan now. We both lost tons of weight and felt a lot better in our minds and guts. But we were also fairly gassy all the time. From my knowledge of medical biochemistry, I knew we had to take some supplements for B12, calcium, zinc, and iron, and get out into the sun for D. GNC also makes/made a supplement just for vegetarians, unless you want to prepare tons of kale constantly.

But we were both in the restaurant field at the time, and it honestly got very tough to keep up the diet when we had all those platters with wonderful looking food on them around us. First it was a bite of steak or chicken, then two bites, then it was game-over. I wanted a splash of cream in my coffee, and a boiled egg is a tasty snack. It's a serious life choice unless you have animal treatment worries that keep you stuck to the vegetarian diet.

My current wife is a steak and carb junkie, and the last attempt at eating vegan lasted two days with her. She's really sorry for the awful treatment of cows and pigs, but you better not get in her way of a plate of crispy bacon and a pan of biscuits made with real lard. Or she'll eat your guts!
