On This Day in 1964 the World’s largest cheese (34,591 lbs) was manufactured in Wisconsin for the New York’s World Fair.
The cheese — a cheddar — was produced by Steve’s Cheese in Denmark, Wis., from 170,000 quarts of milk. It took more than 43 hours to make, and when finished on Jan. 22, 1964, weighed in at 34,591 pounds.
It was reported that everyone, including the cows, were udderly exhausted.

I like this direction. Most folks don't know Jack about cheeses.
If your local market has Brick cheese I highly recommend giving it a try next time you make some homemade pizza. It's similar to mozzarella but a bit more flavorful. You won't regret it. Along with the thicker square crust, Brick cheese is key for an authentic "Detroit Style" pizza.

Huh, I'll have to swing by there next time I run up to green bay or door county. You fuckers have no idea how many types of cheese we can get here. I got a ghost pepper jack that is amazingly creamy. The cheese curds alone would bring the Canadian poutine makers to their knees.
