It’s called Thor’s Hammer. (3kg. each) Slow smoked beef shin. Then served with smoked mac-n-cheese, beer battered chips (French fries) and bear claws to pull apart.

To be honest, unless you're doing it for the personal satisfaction, I'm not sure it worth the time or expense. Just search for "meat claws" on Amazon. They really are not that expensive.
