Knowing my grandchildren (they both have a shoe leather palate) I decided to add diced apples to the soup. Pretty sure it was the apples that hooked 'em.

Thanks for the coconut cream idea. I'll probably never use coconut milk again. The cream made all the difference.

Unfortunately I have to go all the way to the Big Smoke to get mine. I was down on the week-end and picked up another case.

Also while I was in the Asian market I frequent, I found coconut cream powder. Have never seen it before. Will post results next time I make use of it.

Well, I live in an actual city so the wifey was able to find it quite easily.
