Nice article on the original Sriracha aka Siraja hot sauce.
I have to agree, the Rooster brand is nothing but garlically Tabasco sauce, and definitely is awful stuff. I have this Sriraja brand in my fridge, and it is wonderfully tasty and hot. My local Chinese market (I live near a whole block's worth of good oriental grocery stores) has this and other original Thai brands, and all of them beat the Rooster brand by far. My actual favorite hot sauce is a garlic-black bean paste made in south China, I use it when making chili instead of adding powdered hot ingredients.

Sanbel Oelek is really good stuff, and yea I keep a jar of it in my fridge for adding to egg dishes. Compared to a good siraja, it isn't sweet since it doesn't have any sugar, and Thais like their hint of sweet to balance the hot. But that's a minor issue.

Yeah, both amazon and ebay are retarded, never saw that in the stores here. I have about 6 bottles of Franks in the pantry. I like it and it goes on sale 2 for 5 all the time

Not technically a hot sauce but I find myself using this more than hot sauces in my food lately. Sofrito is best when made at home using fresh ingredients and it can be frozen and put in ice cube trays to use as needed. You basically take the ingredients and put them in a blender or food processor.

It's in the link included for specifics but basically take a bunch of red peppers, jalapeno peppers, garlic, cilantro and white onions and put them in a food blender and mix them together. You can make it the way you like. For example, if you like a lot of garlic add more, or if you want it really hot you can even blend in some habanero peppers. On a serious note, what's your recipe?
We get most of the ingredients from our local farmer's market. They are fresh with no preservatives so you have to freeze it so it doesn't go bad. That's why we use the ice cube trays so that we can take out a couple cubes as needed for a meal, and store it in the freezer. It's a seasoning base that you can add to almost anything, like stir fries, soup, anything pan fried, rice, beans, pasta etc etc.
One batch you make can be used for meals for a few months easily. Very healthy too, with little sodium and preservatives + the vitamins you get from using fresh vegetables. That's what you won't find in a typical hot sauce. This base is best cooked with a meal although you can have it raw.
