So I buy FRESH NY srips at a local store and I like them, they're cheap as in maybe 6.99 a pound vs. other stores at 11.99 or more per pound, looks like the same meat. So I buy a "family pack" say 4 to a pack, each abput 12 ounces. I trim the fat off because I freeze the steaks in individual vacuum seal bags and I have found if i freeze untrimmed, the fat seems to leave afoul flavor. so I end up witha trimmed NY strip with no fat, vacuum sealed and usually I just cut the bag open and throw on the propane grill. Mine is patio bistro round grill that helps food not fall out the bottom and cause a fire. how would you folks handle the frozen steaks ?

Not saying you can't find a good deal but if you're paying $6.99 and everything else around you is about $11.99 there is a good chance you're buying "Select" grade steaks...which can still be good if you know what you're doing.

Prime:
This is the highest quality grade, characterized by abundant marbling (intramuscular fat), which contributes to tenderness and flavor.
Choice:
This grade has moderate marbling, offering a good balance of flavor and tenderness, and is a popular choice for restaurants and consumers.

i reheated one in microwave and as suspected, that seems to toughen it up. So i sliced up the other 2 ( they get pretty small when trimmed of fat and the little tail portion, which I just grill that up for that nights meal.) so the small sliced up steaks went into beef fried rice, I have a wok and attachement for my gas grill so do some wok, maybe not as authentic as the really high heat stuff but most of what I have seen of that is everything is boiled/blanched/steamed , whatever , thrown in wok with oil and water and done 1000 times a day. I don'twant that.






anyway, to get to my bitch, I google "potatoes and ham in wok" and all I get are potato ham casserole, no mention of wok cooking and I see that more and more in all my searches. I want recipes for wok or just stories of wok cooking but instead get casseorles. they're totally different but all search engines just convert query to casserole. It pisses me off. end of rant. I do have about an inch of snow on ground here. Really started coming down last couple hours. `

I'd use those to pound out as cutlets for chicken fried steak. That and over medium eggs is a damn good breakfast.
