Don’t they skim off the white chunky stuff?
That's clarified butter. Drawn butter is just melted
😉
Drawn Butter

Rating: Unrated
Serve this butter with our Boiled Lobsters with Corn and Potatoes.
Martha Stewart Living, July 2009
Drawn Butter
Recipe Summary test
Yield:
Makes 3/4 cup

Ingredients
Ingredient Checklist

8 ounces (2 sticks) unsalted butter
Directions
Step 1
Melt butter in a small saucepan over low heat until butter foams and solids sink to bottom, about 15 minutes. Remove from heat. Let cool.

Step 2
Carefully skim foam from top, and discard. Pour clear butter into a bowl, leaving any solids in pan; discard solids. (Drawn butter can be refrigerated for up to 1 month.) Serve warm.

I had a wise man say to me:

“Charlie, you can choose to be right all the time, or liked all the time. Nobody gets it both ways.”
Ghee
Ghee takes longer than that to draw out water, but that's still just clarified butter. Drawn butter traditionally contains the solids for flavor
True on the time factor.

But my Ghee actually has a pretty good butter flavour. It's more like butter flavoured oil at that point. 8-)

Now a bucket of steamed piss clams on the boardwalk at the Jersey Shore is a buttery delight

I dont know what it's called, but this stuff I get at a breakfast place in Algonquin, Illinois called Burnt Toast. It's like a skillet type of thing. Diced sweet potatoes, chorizo, corned beef hash, feta cheese, and cilantro all mixed together and topped with a fried egg.

Or my grandfather's okrashka.

I'm not sure where you're getting your information. It certainly is not "bologna soup". Here, let me help you by giving you my grandpa's recipe.

Okrashka
8 cups of cold water
one-third cup of sour cream
3.5 tablespoons of vinegar
2.5 teaspoons of salt
3 cooked yukon gold potatoes, peeled and diced
3 hard-boiled eggs, diced
3 tablespoons of chopped fresh dill
.5 cup of finely chopped green onion
.5 pound of ham, diced
3 diced cucumbers

1. Place potatoes in a pot and cover with water. Add 1 tablespoon of vinegar and bring to a boil then continue boiling until the potatoes are cooked soft. It should take like 10 minutes or so.
2. Throw the cucumbers and onions directly into the fucking garbage because gross.
3. Put the eggs, ham, potatoes and dill into a large pot.
4. Mix the sour cream, salt, 8 cups of cold water, and the rest of the vinegar in a bowl. Whisk them together.
5. Pour that liquid into the pot with the potatoes and stuff. Mix it up and enjoy.

If you can find kefir where you live, substitute it for the sour cream and your okrashka will be even better.

You throw the cucumbers in the garbage, with the onions. I would say go ahead and add pinto beans, though. That would be good.

Last time we bought them there they kind of sucked. Girlfriend brought the package back and they rolled right over and gave us our money back.

I bought about 10 shares last month. I’m doing ok.
when you buy them are they raw? or already steamed? how do you prepare them?
I think they’re cooked and then frozen close to the dock. The last ones probably thawed out and then got refrozen a second time. Ruined our night. First world problem.
I am pretty sure they are cooked and flash frozen on the ship immediately after harvesting.

3 tablespoons of chopped fresh dill

Agree, chuck the cucumbers (shit house vegetable). I've never heard of this dish- so, does it end up like a warm potato salad?

No, it's a cold soup. Very refreshing and usually eaten in the summer.

Look for and buy "English" cucumbers, also known as seedless or burpless cucumbers. If you have a sensitivity to cucumbers, you can remove the seeds and skin, those cause the problems, not the flesh. Cook with these and no other variety, unless you're making pickles. Also yellow "Spanish" onions instead of white or purple onions, they also cause less problems and taste better.

English cucumbers are long and narrow, lighter colored, and will be wrapped in plastic. You know you have the right kind when your wife sees one and tells you she doesn't need you anymore. ;) Or your boyfriend, I'm not here to judge.
If you can't be a good example, you can still serve as a horrible warning.

Oh, yea! Fried bologna sammiches got me through college when funds got low. Or after tuition time, pretty much the same thing.

For an upgrade, instead of bologna, try Taylor pork roll, if you can find or order it. Shit's to die for!

remember to cut radial slices in the bologna before you fry it so it doesn't curl up into a bowl.
